Curried Salad Recommendation and Blog Roundup

This Sunday, our church had a potluck lunch. Since Saturday was my birthday and I was working, Micah made this curried fake chicken salad. It’s positively delicious–made with tofu, but it tastes rather like an egg or chicken salad. The texture is more like egg than chicken. Even Micah, who’s a little leery of tofu, enjoyed it. And as long as you’re up for chopping, it’s a real cinch to make.

  • Paid Twice recalls being overwhelmed by people paying large sums toward their debt. This is how she paid what she could.
  • Lynnae at Being Frugal realized again how important her budgeting is when she wasn’t able to do it while she was moving.

    I’m not a fan of curry, but I can handle the tofu part of it. ;)

    I should add that it’s not a very strong curry flavor. Perhaps like the flavor of deviled eggs (or at least the recipes that use curry in deviling).

    I’ve never tried tofu — I’d love to give that recipe a try though! Sounds delicious! I’ll try anything at least once! : ]

    I am so glad you tried it. You can substitute leftover cooked chicken for the tofu as well.

    @Tarrant, thanks for recommending it! Substituting chicken back into a tofu dish amuses me…even though I’m sure it’s not that funny.
